Ingredients
- 2 lb pasta
- ½ tsp salt
- 4 lemons, large, juiced and zested
- ½ cup vodka
- 2 cups heavy cream
- 1 tsp pepper
- ½ cup parsley, chopped
- 1½ cups parmesan cheese
Instructions
- In a medium saucepan, heat and whisk the vodka and heavy cream until a thick mixture is formed.
- Add the lemon zest rind and juice to the cream mixture and stir well.
- Then, add the pepper, parsley, and parmesan cheese. Whisk to combine.
- Heat the mixture for 1 minute then remove it from the heat.
- Next, drain the pasta and place it in a large pasta bowl.
- Pour the creamy mixture over the pasta and toss well. Serve it alongside some extra parmesan cheese and enjoy!
