I ALWAYS serve a salad at Thanksgiving, and most other days of the year as well…Yours looks wonderful. I hate to admit that I have rarely tried escarole. Time to make friends!

My mom and I were just talking about making salad for Thanksgiving today. We had decided to relegate the salad-making to a guest, though this looks so good maybe I’ll have to make salad anyway!

I am tacking on a salad to our menu because sometime you need a little greens to help the stomach survive the massive eating on Turkey Day. I think I’m going to try the picked onions on some sort of baby spinach salad.
