I love fennel. Although I can't relate to your issues with it, I appreciate you making this salad. They add such a nice crunch when combined with green. We make a fennel salad that is just fennel tossed with olive oil, lime juice, salt and pepper. We call it the South Beach Salad (it also has grapefruit and avocado) http://www.kitchencaravan.com/recipe/south-beach-fennel-salad.

That looks fantastic. I actually love to broil fennel that I dress with a balsamic vinaigrette, it gets all soft and delicious. The salad idea is great! My boyfriend loves fennel in salad, I have to try this!:)

I'm with you on the fennel! Used to hate it, until I had the tenderest blood orange fennel salad at a restaurant (which I re-created for my blog). Now we're on quasi-comfortable terms.

It is so funny...I know a million people who are great lovers of food who absolutely despise fennel. Glad to hear you've come over to the other side though. When the warmer weather comes and the baby fennel is in the farmers markets you'll have to give it a try. Raw with a little vinaigrette, it is absolute heaven. Suzanne Goin also has a beautiful recipe for fennel and clam pasta in Sunday Suppers at Lucques.

I dislike anisey things as well, but haven't made up my mind about fennel yet. An ex-boyfriend's father used to make a really great fennel soup (velouté with cheese mixed into it). I have nearly the same recipe like yours in a Mary Claire cookbook, been meaning to make that for a while.
Also: yay for spring!
