		<description>I actually prefer turkey and chicken chili to beef chili (I think because it feels less heavy in what is already a very hearty dish).  Ina Garten has an awesome and surprisingly healthy recipe for chicken chili that is worth checking out.  This looks great, though!

John, I hear you, but truth be told, I prefer to cook poultry (and meat) with bones as they impart a flavor that I enjoy quite a bit. Roasting a chicken takes time to perfect, but I think if you are armed with a good recipe, you can get it right!
Lydia - i&#039;ll have to try the green chiles in it next time!

		<description>My eldest brother, unquestionably a red meat lover, recently started cooking healthier due to dangerously high cholesterol, so he turned me on to turkey chili. I could barely tell the difference!

		<description>We buy our meat from local farms too, but what really bugs me is the lack of boneless and ground poultry.  I can cook whole chickens, but, I don&#039;t feel like I&#039;m actually good at it.  Just never comes out as good as I&#039;d like.

		<description>Have you read The Ethics of What We Eat? I found the book shortly after finishing Omnivore&#039;s Dilemma and found it equally fascinating (and alarming). The authors approach eating as an ethical dilemma and go much farther in depth about the impact of our common food choices (organic v conventional v local, etc). Where Omnivore&#039;s Dilemma was something like &quot;corn is the enemy, in pretty much all forms&quot;, the Ethics says &quot;Yes, corn is bad but it&#039;s not that easy.&quot; You should give it a read.
