Sassy Radish

  • 1 red heirloom tomato
  • 1 yellow heirlook tomato
  • 2 cups of mixed greens, washed and dried
  • 1/3 red onion soaked in a solution of 1 cup water, 1/3 cup apple cider vinegar, 1 tbsp sugar
  • 3 tsp extra virgin olive oil
  • 1 tsp balsamic vinegar
  • crushed, black pepper

    Toss the ingredients together with extra virgin olive oil and balsamic vinegar. Sprinkle crushed pepper on top.

    Serves 2.
